St. Patrick’s Day weekend

Green beer, pub crawls, and festive get-ups?!

Apparently, I’m old.  Part of me says I should be partaking in these activities, like I’m missing out if I don’t.  The reality is as much as I love being festive, I had no interest in the holiday this year.

Friday night, I had dinner with the fam to celebrate the sister’s birthday. Crab cakes, homemade mac & cheese, wine, and cake. Fun night with the fam and I was home before 11. Doesn’t get much better than that.

Saturday, I was really low key:

I slept in like 11am for absolutely reason
went for an 8 mile run just because
cleaned my apt like a crazy person – vacuum, dusting, the works..
made a bunch of food just to have, like this:  Quinoa Crunch Casserole

have you ever seen broccoli here before? Nope.

good stuff & super filling

Saturday night, JT & I went to the BC-Maine hockey game at the Garden

surprisingly fun given I'm not really a hockey fan. I'm learning..

game followed by beverages in a non-irish bar, typical Sat night style.

It was an awesome weekend. I’m not ready for it to be over, even if I did skip St. Patrick’s Day.

I’m on a roll this week. Once again, I broke out the Peas and Thank You cookbook & this time, I made some Spanish Quinoa.

I don’t know what flavor I thought I had, but these didn’t mix well. They’re each fantastic on their own though.

After Monday’s fantastic run & considering that it was raining, I decided to go with a little strength training last night rather than running. Oh hello Jillian Michaels.

I shred for the first time in a while, which means I’m sore for the first time in a while. 🙂

Bathroom stretching, don’t mind if I do. I’m supposed to do a speed workout tonight. Not sure my legs are going to appreciate that. We shall see.

This place is too good. I can NOT say no if its even so much as mentioned as a lunch option. For example, I brought my lunch trying to be uber-responsible and healthy. Meatloaf & quinoa will wait til tomorrow.

hope everyone had a great weekend!

I made it to the pool, which was fantastic. Went to Sara & Eric’s for dinner, drinks at the Liberty Hotel, met up with Lauren & John and then spent Sunday at the Cape with the fam. 🙂

Friday night – I ate boring pasta because I feel like I need carbs before a long run.

But I had the urge to cook & had seen this Spinach Quinoa Bake on Iowa Girl Eats. I keep meaning to try quinoa, have had it in the cabinet for awhile, so this combo looked perfect.  I messed with the ratios a lil, less quinoa and less cottage cheese, because I didn’t want quite as many servings, but didn’t want to skimp on the veggies.

I divided this up into 3 servings & had it for lunch today. delic.

I might add more spices next time though.

I felt like I haven’t been around much so there has been lack of cooking in my life lately. It felt awesome to get back in the kitchen.  I may attempt Mama Pea’s Nacho Mmm Sauce tonight just to have in the fridge for tomorrow. mmm.

love that my fridge is stocked and I have a list of recipes to try. 🙂
