So its Friday for real this time ūüôā

I started my day with this:

I’ve made it like 4 times already. Definitely addicted.

So, I decided to run tomorrow.

I’ll have more energy, be better prepared, & its much more likely that it’ll go well. plus its supposed to be almost 50 outside. I’ll take it.

So, I came home after work, seriously cleaned my apt, and knocked a few things off my to-do list.

I’m laying low tonight, making dinner, catching up on my DVR & getting to bed early.

Getting ready to crush some miles tomorrow. ūüôā

my granola recipe

I eat a lot of granola. Usually with greek yogurt & mini blueberries.

(probably 3-4 days a week, so I go through it pretty quickly)

Sometimes I follow a recipe, sometimes I don’t. ¬†This has been my favorite one yet.

Its crunchy, nutty, and just a little sweet.

My Granola Recipe 

4 cups rolled oats

2 tsp vanilla extract

1/2 tsp salt

1/3 cup water

4 tbsp agave

2/3 cup walnut pieces

OR 1/2 cup walnut pieces & 1/2 cup chopped almonds

1. preheat oven to 275.

2. Line 2 cookie sheets with parchment paper.

3. mix water & agave. microwave for 30 seconds or until agave melts & mixes well when stirred.

4. add vanilla & salt

5. mix liquid, oats, & nuts thoroughly

6. spread evenly on the cookie sheets

7. bake for approx 45 min or until golden brown, flip the granola about halfway through.

8. Let cool before bagging.

Makes approx 5 cups, 10 – 1/2 cup servings.

I realize that I never recapped my weekend or more importantly, my lululemon trip.

Friday after work, I set out for my very first Lululemon adventure.

I can not stress how helpful they were!! At least 3 people offered to help & pointed me in the right direction. Then Laura, I’m pretty sure that was her name, was in the dressing room and gave me TONS of helpful advice, plus found me lots of things to try on.

Needless to say – I’m in love & wore it all for my Saturday morning run.

10.5 miles later!

(I really need a full length mirror in my apt. yes, that is my elevator)

really wasn’t hungry so choc protein powder in coffee? yes please.

What to do with the rest of the day? Storm is cominggg.

So, I made some granola.

and burned some of it. ūüė¶

Mid afternoon movie? Sure.

I watched Captain America with JT and Dennis. I was skeptical, not exactly my type of move but it was much better than I expected.

and Dennis almost lit himself on fire.

great plan.

Sunday,  JT made us some fantastic tacos.

Yesterday, I bought candy just in case I got any trick-or-treaters.

Well I didn’t.¬†But I did learn that Take-5 bars are phenomenal.

Chocolate, pretzel, peanut butter, caramel & peanuts. Seriously, where have you been all my life?

Must get rid of them all now.

Oh! and its a new month, soooo a new set of goals?!

What am I trying to accomplish in November? Nothing crazy..

1. PR at the Philly Half Marathon –¬† I really want to beat my time of 2:22:11¬† & I think its within reach.

2. Yoga once a week – Bringing it back, since I actually did this in October. ūüôā

3. Shred in the AM – I haven’t been awesome about strength training. Shred takes 25 minutes. There is no reason I can’t get this done once a week before work.

4. ¬†Start my Christmas shopping – I’m a last-minute shopper & there is no reason for it.

What else do I need at lululemon? (aside from everything of course)  

When do you start holiday shopping?  Insanely early? or late like me?

Hopefully, I’ll be at a Boston Blogger meet up tonight and won’t have time to post. So I’m going to give you a few of my favorite search terms that have brought people to the blog.

  1. criminal minds “alli”¬†– while I do love criminal minds, pretty sure there is no alli¬†on it. I think I’ve only mentioned it once so whoever is stalking my dvr settings, stop that.
  2. crazy jobs, nyc – I had a few of those. I don’t anymore. Nor do I really talk about it on the blog.
  3. my favorite day of the week is tuesday – now this is just ridiculous. I would love to know why. tuesdays are the worst
  4. i learns Рuhh, yeah, it sounds like you need to.
  5. granola meatloaf Рplease tell me no one tried to combine these two things?!  I love them both, but just no.
  6. what I learned at harvard law school –¬†Shouldn’t you already know what you learned?¬†Glad I don’t need an attorney.. ¬† Plus, I’m pretty sure my version of HLS was way more fun.

Yesterday afternoon, after my weekend of fun, I decided it was necessary to do some serious cooking.   I surveyed the recipe pages of a few blogs & came up with a plan.
First –
Sweet Potato Meatloaf.
I love that its a different twist on meatloaf. I’m on a big sweet potato kick and make a LOT of meatloaf.

joys of cooking for 1 – 1 now, 5 for later
 delic.  (I put a lil bbq sauce on the side too)
Next up! Granola. 
last week’s granola was so fabulous, I need to start making it more often.¬†
1 cup rolled oats
1 Tbsp chia seeds
1/4 cup sliced almonds
1 Tbsp sunflower seeds
3 Tbsp unsweetened applesauce
1 tsp vanilla extract
1 Tbsp agave nectar
mix all ingredients. spread evenly on parchment paper. bake at 325 for 10 minutes. flip granola. bake 10 minutes. 
Flavor is good – but I should’ve used a touch of oil. Not as crunchy as I wanted it to be.¬†
Now for one of my favorite snacks, which is definitely just a bit different, but I’ve been eating it this way for yearss & secretly, its the only way I want popcorn. ¬†¬†
(I know I didn’t make it up. a chrissy creation maybe?)¬†
Bare with me Рit sounds a little weird, but its awesome. 
94% fat free microwave butter popcorn
Frank’s Red Hot sauce
little bit black pepper
so good. 
just try it. 
I’m getting to the point in my training plan that I have to up my short runs. Tonight’s run was a pretty brutal 4.5 miles. My right shin tightened up right away and it felt like I had one lead foot. I can’t even explain it, but it made running realllyy hard. ¬†So I paused stretched a lil and powered through. Once I got to about 2.5 miles, it loosened up & I started feeling pretty good.¬†
I feel like a terrible Boston-ite Bostonian (fail alli. fail.)¬†I’m not even pretending to watch Game 6. Oops.¬†

alli got an iphone!

the month of Boston begins! 
It felt really great to be here & home this weekend.
strolled over to the verizon store yesterday afternoon to get my iphone! eeeekkk. love it.
& managed to make some progress on one of my june goals.

I really need to start wandering around with my camera more often. then again the iphone camera does a pretty solid job.

current set up – hence my goal to convert fully to the mac.
seriously… 2 computers. camera. too much.
I wasn’t in the mood to run tonight. (must go in the AM)
but instead really in the mood to cook.
dinner:
2 small tortillas
1/2 cup fat free refried beans
one large slice red onion
1/2 medium tomato
1/4 avocado
1 oz shredded cheddar
salsa
in a sprayed skillet, on the stove til it gets crunchy.
delic.
and then I made GRANOLA.
coconut granola.  inspired by this.
i used agave nectar instead of honey since thats what i had.
i can NOT wait to eat this tomorrow.
sweet. crunchy. yum.
so glad Monday is over. I’m really hoping this week doesn’t drag, but I expect it will.
Too many fun things happening this weekend.
