Cranberry Walnut Loaf

What do I do when I have 3 servings of lasagna, 4 of sweet potato lentil soup, and a piece meatloaf?

Eat leftovers definitely. Stop cooking?! Probably a good plan.

But.. I’m almost out of yogurt, so I need a breakfast alternative. I’ll BAKE!

I found this recipe by searching items that I already have & changed it a LOT.

Cranberry Walnut Loaf

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup cornmeal
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp salt
  • 3 1/2 tbsp truvia
  • just less than 1 1/4 cups soy milk, splash of lemon juice, let sit for 5 min
  • 1/3 cup & 1 tbsp pourable egg white
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract
  • 3/4 cup chopped walnuts
  • 3/4 cup dried cranberries

1. Preheat oven to 350°F.
2. Mix dry ingredients in a large bowl.
3. Mix milk mixture, egg whites, applesauce, vanilla and maple syrup in a small bowl.
4. Add liquid ingredients to dry, mix with a fork.
5. Add in walnuts and cranberries.
6. Spray a loaf pan with cooking spray, bake for approx 1 hour or until done.  
7. Cool before removing from pan.

it’s a bit denser than I expected, but delicious. slightly sweet, a little chewy, and festive 🙂

When I arrived at HLS, I knew nothing about Attune Foods. I got to try a few of their products while I was there and was definitely intrigued.  Simple Ingredients, Simply Made.  Sounds perfect right?

So when they offered to send me some cereal – umm. yes please?!

I got the Uncle Sam Honey Almond & a box of the Erewhon Strawberry (that I’ll review another day)

Their description of the Uncle Sam Honey Almond:

“She’s buzzing with flavor and is a popular guest at the breakfast table. This belle of the breakfast is all dolled up, wearing her sliced California almonds and gushing of clover honey. Her honeyed replies smack of high protein, high fiber, and of course, good taste.”

I’m not quite that creative with my words..  I don’t eat cereal for breakfast often because it usually can’t keep me full until lunch. This one could.  I’m impressed.  It was sweet, crunchy, and guilt-free. Its good with milk and I would bet it would be good with yogurt too. Next time!

I love that I can count the ingredients on my fingers and even better, I can pronounce them all.

Tina, Lisa, Janeetha & Beth talked about numbers. focus on the things you can control. numbers can motivate but also make you crazy. check in with yourself & what works for you.

After the last session, a group of us wandered back over to Reading Terminal Market to check it out while its open. I could’ve taken a thousand pics, but instead you get sign & flowers. pretty
liberty bell!!I don’t think I’ve actually ever seen the Liberty Bell. Glad we made it during the jam-packed weekendabout ten of us ended up at The Corner for dinner. Super cute. Sangria was excellent – just what I needed after a looong and informative day these little cornbreads were fantastic – soft, fluffy, buttery

I ordered the corner burger – it was good but nothing blog-worthy

last night’s surprise rain storm was annoying at first – and then I realized it was pretty great.  did I have to walk home in the rain? yeah. BUT

it also means that the temp dropped and the humidity pretty much went away. That means: 

  1. no AC.   maybe I’m just cheap but sleeping with the slider open, the fresh air seems so much better than AC. glorious. 
  2. that when I got up this morning for a 4 miler, it was a delightful 64 degrees. AMAZING.

it was surprisingly windy, which I didn’t love, but at least this didnt happen soo I’ll take it.  Cool & windy definitely beats the 90+ degrees and humidity that I battled on Tuesday night. iicckkk.

can you think of a better way to start the day?  I can’t.


actually yeah, I can.

follow up that run with the best iced coffee ever.

iced french roast with vanilla almond milk & half scoop vanilla protein powder.  sooo good and then I made the breakfast I blogged yesterday, because I loved it that much.   now if I could only fast forward to tomorrow evening. baaalllltimore.

2. she’s the reason I like scotch.

NYE 2009 – 2 and 9 broke off, oh welllll. i got scotch & a smart phone. all a girl needs

1. being prepared – when it downpoured right before I was leaving work today & I realized I had an umbrella in my purse & rainboots under my desk –> so happy

2. secretly stretching in the handicap stall  – still pretty sore. this helped lots.  might be a lil weird but so am I.

3. mid afternoon fro-yo break –  yesterday I had a craving. In NY, there is good fro-yo everywhere. Boston: not so much.  Thanks to some google searching on my super awesome iphone, I discovered my new favorite place.  good fro-yo. good toppings. walkable from work. BEST FIND EVER.

4. this for breakfast – Technically, I had this yesterday but I wish it was today too.  Fresh strawberries, 1/4 cup raw oats, 6 0z FAGE 0% greek yogurt, 1 tbsp sunflower seeds & a Dunkin Iced.  perfection.

(I know it looks hot but the cold cup is just hiding inside the hot one.)

5. healthy freebies on the street – excited to try this.

6. lunchtime pedicures – my toes were wayy overdue. It was wooonderful. (definitely better than whoopie pie pans ;)) I’ll spare you the pic.

7. the fact that in 48 hours, I’ll be in Baltimore!! yayyyyy!!
